Ingredients
- 12 Joseph’s Flax Wraps
- 4 ½ cups for cooked, shredded chicken
- 3 cups of shredded Mexican-style cheese
- 1 ½ cups of pre-cooked black beans, drained and rinsed (optional)
- 1 ½ cups of canned corn (optional)
Toppings for serving:
- Salsa
- Guacamole
- Sour Cream
- Fresh cilantro
One pan, one giant quesadilla. This Flax Wrap quesadilla bake is a simple, crowd-pleasing dinner the whole family will love!
Directions
- Preheat oven to 375°F and lightly spray a large baking tray with cooking spray.
- Prepare filling: In a large bowl, mix chicken, cheese, beans, and rice.
- Assemble wraps: Lay Joseph’s Flax Wraps on baking tray until the entire tray is covered and edges of wraps are hanging over the edge of the baking tray for easy folding.
- Fill: Spread chicken, cheese, beans, and corn mixture evenly over Joseph’s Flax Wraps.
- Cover: Fold top half of Joseph’s Flax Wraps over the filling to fully cover the chicken and cheese mixture.
- Bake: Lightly spray with cooking spray and bake for 12-15 minutes, or until heated through and lightly crispy.
- Serve: With desired toppings!
