Ingredients

  • 12 Joseph’s Flax Wraps
  • 4 ½ cups for cooked, shredded chicken
  • 3 cups of shredded Mexican-style cheese
  • 1 ½ cups of pre-cooked black beans, drained and rinsed (optional)
  • 1 ½ cups of canned corn (optional)
  • Salsa
  • Guacamole
  • Sour Cream
  • Fresh cilantro

One pan, one giant quesadilla. This Flax Wrap quesadilla bake is a simple, crowd-pleasing dinner the whole family will love!

Directions

  1. Preheat oven to 375°F and lightly spray a large baking tray with cooking spray.
  2. Prepare filling: In a large bowl, mix chicken, cheese, beans, and rice.
  3. Assemble wraps: Lay Joseph’s Flax Wraps on baking tray until the entire tray is covered and edges of wraps are hanging over the edge of the baking tray for easy folding.
  4. Fill: Spread chicken, cheese, beans, and corn mixture evenly over Joseph’s Flax Wraps.
  5. Cover: Fold top half of Joseph’s Flax Wraps over the filling to fully cover the chicken and cheese mixture.
  6. Bake: Lightly spray with cooking spray and bake for 12-15 minutes, or until heated through and lightly crispy.
  7. Serve: With desired toppings!
