Mini Pita Pies – two ways

Ingredients

  • 1 package of Joseph’s Mini Pita Snacks (Original or Free From)
  • 1 can of pre-made apple pie filling (or sauté apple slices in butter with cinnamon)
  • 1/2 cup of flour
  • 1 cup of light brown sugar
  • 1/2 cup of oats
  • 5 tablespoons of cold diced butter
  • 2 teaspoons of cinnamon
  • 1 can of pumpkin puree
  • 1 large egg
  • 1/4 cup of milk

Directions

For Mini Pita Apple Crumble

  1. Preheat oven to 375 degrees.
  2. In a mixing bowl, mix the dry ingredients (flour, light brown sugar, oats, salt and cinnamon) together.
  3. Add in the cold butter, and mix using a fork or hands until mixture is crumbly. Do not over mix.
  4. Butter the sides of the cupcake tin.
  5. Fill the cupcake tin up with Mini Pita Snacks, placing one down flat in the bottom of each spot. Then fill with 2 tablespoons of the pre-made apple pie filling in each spot and generously top with the crumble.
  6. Bake for 15 minutes or until the crumble becomes golden brown.

For Mini Pita Pumpkin Pie

  1. Preheat oven to 375 degrees.
  2. In a separate mixing bowI, mix together 1 cup of pumpkin puree, 1/2 cup of brown sugar, 1 large egg, 1/4 cup of milk and 1 teaspoon of cinnamon.
  3. Butter the sides of the cupcake tin.
  4. Fill the cupcake tin up with Mini Pita Snacks, placing one down flat in the bottom of each spot. Then fill with 2 tablespoons of the pumpkin pie filling in each spot.
  5. Bake for 15-20 minutes. Pie should be fully cooked, releasing from the sides and becomes a deeper orange color.
