  • 1 red onion, sliced (reserve half for grilling, half for topping)
  • 1 cucumber, sliced or diced

  • 2 tbsp olive oil
  • 1 tbsp lemon juice (optional)
  • Tzatziki sauce – for topping
  • Feta cheese (optional)
  • Salt & pepper, to taste
  • 1 tsp dried oregano (optional but recommended)

Preparing and cooking the Chicken

  1. In a bowl, toss the chicken cubes with: 2 tbsp olive oil, 1 tsp salt, ½ tsp pepper, 1 tsp dried oregano (optional), juice of half a lemon (if using), half of the sliced red onion.
  2. Cover and marinate for at least 30 minutes (up to 2 hours for best flavor)
  3. Using a large skillet or grill pan, cook chicken (in batches if needed) for 6–8 minutes on medium-high heat, until golden and cooked through.

Assemble the pita:

  1. A handful of shredded lettuce
  2. A scoop of cooked chicken
  3. A few slices of cucumber and red onion
  4. A dollop of tzatziki
  5. Sprinkle with feta cheese (if using)
