  • 5 eggs
  • 2 oz of butter
  • ¼ cup of milk
  • ½ cup of broccoli
  • 1 cup of spinach
  • ½ of diced assorted peppers
  • ¼ cup of mozzarella cheese
  • ¼ cup of feta cheese
  • Toppings: arugula, thinly sliced red onion

Turn this quick and easy breakfast staple into a protein packed breakfast sandwich with Joseph’s Flax Pita! This Frittata Pita Breakfast Sandwich recipe comes together in just 30 minutes and is the perfect make-ahead breakfast for a family on-the-go!

Directions

  1. Start by whisking together the frittata base: a simple mixture of eggs, milk, mozzarella cheese, salt, and pepper.
  2. Then, sauté your veggies in a 10 inch skillet just until tender.
  3. When the veggies are ready, pour in the frittata base, and shake the pan gently to distribute it among the vegetables. Cover  and cook on medium-low for 5 minutes.
  4. Transfer the pan to a 350-degree oven. Bake for 15 to 20 minutes, or until the eggs are set and the top is lightly golden around the edges.
  5. Allow the frittata to cool slightly before slicing into fourths.
  6. Cut Joseph’s Flax Pita into fourths and build your frittata sandwich by layering arugula, red onions and the frittata onto the pita.
  7. Enjoy!
