Ingredients

  • 3 Joseph’s Flax Mini Pita
  • ½ lb ground turkey
  • ½ tsp olive oil
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ½ tsp ground cumin
  • Salt and pepper to taste
  • ¾ cup shredded cabbage
  • ¼ cup shredded carrots
  • ¼ cup shelled edamame
  • 2 tbsp plain Greek yogurt
  • ½ tsp apple cider vinegar

A lighter take on taco night! Ground turkey smash tacos made with our Flax Mini Pita for bold taco flavor, crispy edges and refreshing cabbage slaw.

Directions

  1. Make the slaw. In a medium bowl combine cabbage, carrots, edamame, Greek yogurt and vinegar and mix together well. Set aside.
  2. Smash the Turkey. Divide turkey into 3 equal portions and press evenly onto one side of the Flax Mini Pita. Season with garlic powder, paprika, cumin, salt and pepper.
  3. Cook the Tacos. Heat oil in large skillet over medium-high heat. Place pitas turkey-side down into the hot pan. Cook for about 5-6 minutes, until turkey is cooked. Flip and cook pita-side down for 1-2 minutes, until lightly toasted.
  4. Assemble. Remove from skillet and top each smash taco with a generous spoonful of cabbage slaw.
