Ingredients
- 3 Joseph’s Flax Mini Pita
- ½ lb ground turkey
- ½ tsp olive oil
- ½ tsp garlic powder
- ½ tsp paprika
- ½ tsp ground cumin
- Salt and pepper to taste
For the Cabbage Slaw:
- ¾ cup shredded cabbage
- ¼ cup shredded carrots
- ¼ cup shelled edamame
- 2 tbsp plain Greek yogurt
- ½ tsp apple cider vinegar
A lighter take on taco night! Ground turkey smash tacos made with our Flax Mini Pita for bold taco flavor, crispy edges and refreshing cabbage slaw.
Directions
- Make the slaw. In a medium bowl combine cabbage, carrots, edamame, Greek yogurt and vinegar and mix together well. Set aside.
- Smash the Turkey. Divide turkey into 3 equal portions and press evenly onto one side of the Flax Mini Pita. Season with garlic powder, paprika, cumin, salt and pepper.
- Cook the Tacos. Heat oil in large skillet over medium-high heat. Place pitas turkey-side down into the hot pan. Cook for about 5-6 minutes, until turkey is cooked. Flip and cook pita-side down for 1-2 minutes, until lightly toasted.
- Assemble. Remove from skillet and top each smash taco with a generous spoonful of cabbage slaw.
