Ingredients

  • 3 Joseph’s Flax Lavash (cut in half)
  • 12 eggs
  • ¾ cup milk
  • 6 slices of bacon, cooked and chopped
  • 1 ½ cup of fresh spinach
  • ¾ cup crumbled feta cheese
  • ¾ cup sundried tomatoes, chopped
  • 2 tbsp of oil
  • Salt and pepper to taste

Make-ahead spinach and feta breakfast burritos wrapped in Joseph’s Flax Lavash. Freezer-friendly, easy to prep, and ready in minutes!

Directions

  1. Scramble the Eggs. In a bowl, whisk the eggs with milk and salt and pepper to taste. Heat olive oil or butter in a skillet over medium heat. Pour eggs in a skillet, stirring gently until cooked.
  2. Add Mix-Ins. Remove from heat and stir in chopped sundried tomatoes, feta, and bacon.
  3. Assemble Burritos. Lay Lavash flat and evenly divide the egg mixture among the burritos. Top egg mixture with fresh spinach.
  4. Wrap and Prep for Freezing. Fold in sides of Lavash and tightly wrap into burritos. Wrap each burrito individually in foil or parchment paper, then place in a freezer-safe bag or air-tight container.
  5. Store in freezer for up to 3 months.

To Reheat: From Frozen: Remove foil and place in microwave for 1 ½ – 2 minutes, flipping hallway.

Pro tip! For crispy exterior, after the microwave place in a heated skillet for 2 minutes on each side or until Lavash is golden brown.
