8 Joseph’s flour tortillas
1 medium tomato, diced
1 cup of lettuce, finely minced
12 oz. imitation crab or lobster salad, shredded
2 stalks celery, finely diced
4 to 6 heaped tablespoons light mayonnaise
Pepper, to taste
1/2 teaspoon vinegar
*Makes 4 servings
- Place seafood salad in a bowl.
- Stir in celery, pepper, vinegar. Add light mayonnaise until desired consistency. Mix well.
- Put mixture into tortillas.
- Garnish with lettuce and tomatoes on top.
- Roll up and serve.
