‘See Food That’s Good’ Tortilla

Ingredients:

8 Joseph’s flour tortillas
1 medium tomato, diced
1 cup of lettuce, finely minced
12 oz. imitation crab or lobster salad, shredded
2 stalks celery, finely diced
4 to 6 heaped tablespoons light mayonnaise
Pepper, to taste
1/2 teaspoon vinegar

*Makes 4 servings

Instructions:

  1. Place seafood salad in a bowl.
  2. Stir in celery, pepper, vinegar. Add light mayonnaise until desired consistency. Mix well.
  3. Put mixture into tortillas.
  4. Garnish with lettuce and tomatoes on top.
  5. Roll up and serve.
